- 1Mix beef, pork, garlic, egg, parmesan, breadcrumbs, salt and parsley to make meatballs. Form inch diameter balls on a sheet tray. Bake at 350F for 30 minutes.
- 2Meanwhile prepare the soup. Heat the stock, then add in the escarole. Let the escarole simmer for 5 minutes then add in the pasta. Cook the pasta for 8 minutes at a simmer.
- 3Combine meatballs and broth then serve.
