  • 1Before cooking prepare a bowl of ice and water. Also set a pot of salted water on the stove to boil. Wash the beans and trim off the ends.
  • 2Place beans in boiling water for 2 minutes, then immediately transfer to the ice bath. In a pan on medium heat add a drizzle of olive oil then reheat the beans.
  • 3Add in shallots, salt and pepper then serve.
