- 1Chop onion and saute in olive oil until translucent. Chop cauliflower and add to onions.
- 2Add stock. Simmer for 15-30 minutes until cauliflower is soft.
- 3Take soup off heat and blend with stick-blender. OPTIONAL add heavy cream and Parmesan cheese. Adjust salt and pepper to taste. Finish in bowl with a little extra virgin olive oil.
