- 1Chop the carrots, celery, onion and garlic then sweat in a pan with olive oil. Add in cumin, salt, pepper and cloves.
- 2Add in lentils and cooking liquid (we use chicken stock but any stock or even water will work fine).
- 3Simmer for 45 minutes with the lid on. Check consistency after 45 minutes, adding additional if too thick and reducing with the lid off if too thin.
