Skate Wing in Brown Butter

  • 1Preheat oven to 180F. Season skate win on both sides then heat a frying pan on medium-high heat. Add a tablespoon of butter and one of olive oil.
  • 2Cut the skate wings in half, then place them into the hot oil. Cook for 2 minutes a side until the edges begin to brown. Places skate wings on a baking sheet in the oven to keep warm.
  • 3Return the same pan to the heat and melt remaining 2 tablespoons of butter. When the butter is fully melted add in the capers and fry them for 30 seconds.
  • 4Add in the wine and scrape the pan with a wooden spoon to get any brown bits into the solution. After a minute on the heat add in the lemon juice and parsley to the wine, then take off the heat.
  • 5Serve the fish immediately topped with the butter sauce.
