- 1Preheat oven to 400F. Peel potatoes and set aside in water. Combine milk and cream over heat, adding in 2 tablespoons butter to melt. Use remaining butter to grease 9x9 baking pan.
- 2Slice potatoes as thin as possible (mandolin where available) then place a layer of them lining the bottom of the baking pan. Top with a layer of melting cheese (Swiss, Gruyere or cheddar) then repeat alternating potato and cheese layers. End with potatoes on top.
- 3Pour dairy mixture over the potatoes making sure it fills any and all gaps. Fill the pan until the liquid is even with the potatoes. Top with additional cheese and parmesan. Bake at 400F for 45 minutes, until potatoes are easily punctured with a knife.
