- 1Lay out a piece of parchment paper for each portion. Place fish in middle of paper.
- 2Thinly shave carrots, celery and shallots. Add shaved carrots, celery and shallots into the paper packet. Season with kosher salt and pepper.
- 3Add olive oil, soy sauce and white wine. Fold paper into a pouch and twist the ends. Bake in 400F (200C) oven for 15 minutes. Serve in pouch!
