  • 1Rough chop celery, carrot and onion. Put celery, carrot, onion, garlic, bay leaf and thyme in pot. Saute with a little olive oil. Preheat oven to 425F.
  • 2At the same time, salt the beef and bring to room temperature. Roast ribs in the oven for 15 min, just to brown, on a sheet tray.
  • 3Add the beef and the stock to the veggies and put in a 325F oven for 2-3 hours. Serve and enjoy.
