- 1Make a breadcrumb mixture using the breadcrumbs, parsley, garlic and shallots. Moisten this mixture with a tablespoon of olive oil and a splash of chicken stock. Should be moist but not wet.
- 2Preheat over to 450F. Season the lamb with salt and pepper and put it in the oven. Cook until very rare, 125-130 internal temperature.
- 3Pull lamb out of the oven and coat with the breadcrumb mixture. Set oven to the broil function and put the lamb back in until the breadcrumbs are brown and toasted. Will happen very quickly.
