- 1Slice tomatoes in half. If they are particularly large, slice them into thirds. Preheat oven to 425F.
- 2Arrange on an aluminum foil lined sheet tray, with the cut side on top. Season with salt, pepper, garlic and a drizzle of olive oil.
- 3Cook for 40-60 minutes, checking them every 5 minutes after the first 40. They should shrink down with the water loss, intensifying their flavor.
