Trout with Browned Butter and Capers

- 1Season both sides of the fish and brush with olive oil. Preheat oven to 250F.
- 2In a nonstick pan, melt 1 tablespoon butter in a drizzle of oil. Saute trout on both sides briefly, till the first signs of browning. Transfer fish to a tray and place in oven.
- 3Clear pan of excess oil but do not use water. Add remaining 2 Tablespoons of butter on medium low heat to melt.
- 4When butter is fully melted and shows signs of beginning to brown, add in the drained capers and saute for 30 seconds. Squeeze in juice from half the lemon, and remove from the heat.
- 5Remove fish from the oven; it should be fully cooked through at this point. Serve topped with brown butter caper sauce.
