Sauteed Squid with Tomatoes, Garlic and Shallots

  • 1Clean the squid, then slice into rings. In a pan on the stove top on medium heat, saute the shallot. Once it starts to cook down add the garlic and cook 30 more seconds.
  • 2Add tomatoes and saute just till they come up to heat. Add in squid and continue to saute for another 30 seconds. Then introduce the cooking liquid to the pan.
  • 3Keep an eye on the pan the entire time. The squid will quickly turn white and firm. At this point add scallions and parsley then take off the heat.
  • 4Serve over rice or pasta, with a slotted spoon to remove excess liquid.
