Poached Asparagus

Poaches Asparagus can be served as a starter, a side dish, on top of a salad or really just about anywhere.

- 1Trims the bottoms off the asparagus then peel the larger spears. Heat a pot of water deep enough to hold all the asparagus to poaching temperature (just below boiling).
- 2Poach asparagus 5 minutes, then remove from heat. Drain off water and add in butter and return to a low heat.
- 3Once butter had melted and coated the spears season with salt and pepper. Finish with the juice of half a lemon, and serve warm or cold.
