Haricots Verts with Shallots

Fresh French green beans come alive rather than wilting in the preparation.

  • 1Set a pot of water to boil, and as it comes up to heat trim the ends off the beans. Blanch trimmed beans in boiling water for 2 minutes. Take off heat and place in an ice bath to stop cooking.
  • 2Drain water, then return the beans to the pan with a drizzle of olive oil and the diced shallots.
  • 3Saute 2-3 minutes, until the shallots are translucent. Serve hot or at room temperature.
