
Sauteed Bay Scallops

Buttery Bay Scallops to serve atop rice or pasta.

- 1Pat dry the scallops with a paper towel. Season them with salt and pepper. In a large non-stick pan heat clarified butter (if unavailable use olive oil and butter in equal parts) on medium-high heat.
- 2Add scallops and saute till they brown, 1 minute per side. Remove scallops and set aside. Add wine and lemon juice.
- 3After the wine and lemon cook don for a minute, add 1 tablespoon butter and turn off the heat. Return scallops to the pan and add chopped parsley. Serve over rice or pasta to catch the butter sauce.
