- 1Remove lamb chops from fridge 30 minutes ahead of time to bring them to room temperature. Drizzle with olive oil and season with salt and pepper.
- 2Preheat grill on medium. When the grill is hot, place chops over the hottest part of the flame, cooking two minutes per side. Turn down heat and close grill top to cook through, about 2 minutes.
- 3Make sure to rest the lamb at least 5 minutes before serving.
