- 1When selecting steaks choose thick (1.5-2 inch) cut ones, about a half pound per person. Drizzle with oil and season with salt and pepper. Allow steaks to come to room temperature.
- 2Preheat grill on high. Cook steaks about 6 minutes per side, twisting 90 degrees halfway through to get diamond grill marks.
- 3Once both sides are done move the beef to a cooler part of the grill to finish cooking. Check with a meat thermometer to determine doneness. Rest ten minutes before serving.
