Chicken Satay with Peanut Sauce

  • 1Slice Chicken into long strips then season with salt,pepper and paprika. Thread them onto soaked skewers.
  • 2Then assemble the sauce. Saute the two chopped garlic cloves in the olive oil. Add in the chicken stock and peanut butter. Once mixed, add in the sambal olek. Use more or less depending on your own spice tolerance. Then mix in the lemon juice and bring to a boil. You can simmer to reduce the sauce to a thicker consistency.
  • 3Grill chicken skewers until done (3-5 minutes each side) then serve atop rice with sauce.
